Soppressa is a typical salami from the Veneto region, where it is produced. Various parts of the pig are used, mixed together with the addition of garlic. The mixture is put into natural bovine gut and left to mature for at least 2 months. The excellence of the soppressa is in the alternation of the delicate taste of the meat with the strong flavour of the garlic; it also emanates a delicate yet enticing smell.
Remove the string before cutting it and clean the surface of mould (a sign that the product is healthy), remove the skin and slice at the time it will be used. Once open, keep in the frideg.
HOW TO USE IT: with other cold meats; if cut into pieces it’s inviting in aperitifs or on toasted bread.
