Pancetta originated in the Emilia Romagna regionand is a cold meat prepared with belly pork. It is firstly sprinkled with salt and then left to rest for a few days. There are three different ways of packing this type of meat:
- rolled with pigskin (see photo);
- larded with pigskin;
- hung in pigskin (if there’s no pigskin, it’s put into natural gut).
Then there is the maturation which gives the meat all its flavour. Slices of pancetta have white (fat) and pink (lean meat) layers, an alternation of flavour that leaves a unique, unmistakeable taste on the palate and delights the smell with a sweet, delicate perfume.
HOW TO USE IT: Pancetta can be eaten on its own, with other cold meats or used to flavour first courses.
