As Fontina is a Protected Designation of Origin (PDO) cheese, it is only produced in the Valle d’Aosta. Only the milk from three breeds of cows is used (pezzata rossa - Red Spotted, pezzata nera - Black Spotted and pezzata castana - Brown Spotted) and these only eat forage and hay. The semi-soft texture of this cheese ranges from white to pale yellow in colour and the taste varies from delicate to more intense, depending on how ripe it is. Its fragrance encapsulates all the perfumes that mountain air can offer.
HOW TO USE: Fontina is tasty on its own, with other cheese or with sweet-spicy sauces. Locals in the Valle d’Aosta love to eat it with polenta (polenta concia )where the cheese is melted on the top.
INGREDIENTS: Raw full-cream cow’s milk from the breeds mentioned above, salt and rennet.
