Casera is the traditional cheese of Valtellina, an Alpine area near Sondrio in Lombardy. The milk from cows which only eat Alpine herbs is used to make Casera, giving the cheese a unique, delicate taste that becomes stronger as itages. The cheese varies in colour from white to straw yellow and from soft to compact in texture, depending on how much it has ripened. Casera has a special fragrance that recalls Alpine air, the symbol of purity and freshness. Recently, the brand has become a Protected Designationof Origin (PDO).
HOW TO USE: an excellent cheese to eat on its own, with other cheese from Valtellina, for example, Bitto, or it’s exquisite with pizzoccheri (see recipe).
