Montasio is the typical cheese from Friuli-Venezia-Giulia and some areas of Veneto. It is ripened for at least 60 days and it is then distinguished as fresh, medium (mezzano)and very mature (stravecchio) Montasio, according to how mature it is. At the start of ripening, it has a delicate flavour and the cheese and rind are soft and white; the flavour becomes more intense as the cheese matures while the rind darkens and the paste becomes harder and more crumbly. Montasio is a Protected Designation of Origin (PDO) brand and is recognised by the etching of the word ‘Montasio’ obliquely on the base of the form.
HOW TO USE: it can be eaten alone, with other cheese like Bitto or Casera or sweet-spicy sauces.
INGREDIENTS: cow’s milk, salt and rennet; the rind is treated with E235. The rind is not edible.
