Piedmontese toma cheese originated in Piedmont and the production area includes various provinces; the most important are Turin, Cuneo and Biella. It has been branded Protected Designation of Origin (PDO) since 1986. It is only produced with cow’s milk; the smooth rind is elasticand pale yellow in colour, and it has a soft texture with some eyes in it that is white in colour. Firstly, the cheese is covered in coarse saltby hand and then it is placed in natural caves or similar environments for ripening, which lasts a minimum of 60 days. Toma has is sweet with a bitter aftertaste and has a fragrance that encapsulates all the features of the cave.
HOW TO USE: it’s tasty with other cheese like Castelmagno or sweet-spicy sauces. Locals in the areas of production usually eat it with polenta (polenta alla piemontese) - see recipe.
