Grana Padano is the best-known and most produced Italian cheese in the world. It has the Protected Designation of Origin (PDO) brand and the production area includes the Po Valley (Lombardy and Emilia Romagna). This cheese has ancient origins as the monks had already found a way of preserving large quantities of milk to satisfy the population of their village in the Mediaeval period. The milk used only comes from cows fed with absolutely natural food such as hay, alfalfa or some fodder. The production stage is very long and ripening varies from 1 year (immature grana) to more than 2 years (reserve grana); the experts of the consortium select the form sone by one, branding only those that pass the selection with the symbol. The cheese varies from white to yellowish in colour, according to maturity while the rind is yellow and smooth. Immature grana leaves a sweet flavour on the palate while reserve grana is tastier as it has ripened for longer.
HOW TO USE: Grana Padano can be accompanied by cold meat, pickled vegetables, savoury biscuits and sparkling white wine. It can be added, grated, to pasta or in a risotto. It is also tasty with honey, sweet-spicy sauces and balsamic vinegar.
