Parmigiano Reggiano is a cheese D.O.P. (Protected designation of origin) produced exclusively in the provinces of Parma, Reggio Emilia, Modena and part of the provinces of Bologna and Mantua.
Its production dates back to the time of the Middle Ages.
The monks were able to find a way to preserve long large quantities of milk. Today, the tradition continues with the same techniques and with the same genuine just because the cheese does not contain any preservatives nor chemical additives.
The cattle feed on forage that is only present in that area.
The maturing can vary from a minimum of 12 months to more than 30 - 40 months. In addition to more than seventy 'years is a guaranteed cheese by the Consortium.
HOW TO USE IT: Parmigiano you can taste grated over pasta, risotto, lasagne, cannelloni, etc.. otherwise flakes with senapate sauces or sweet-spicy, with meats or other cheeses.
