Porcini are the most delicious mushrooms in Italian cuisine. These mushrooms are picked and processed in the Valtellina area in Lombardy. They are simply cut and left to dry (this is why they are dried) but, despite this, they hold all the flavour and fragrance of the typical Alpine wood. They are of such high quality that the fragrance can be smelt from the packet.
