Parma ham is the most famous and best known all over the world. It could be called the ‘king of ham’, also because of the crown symbol branded on the haunches. It is only produced in the province of Parma in Emilia Romagna. The haunches of the pig are used to produce the ham which then under goes a period of drying and salting. A natural fat called sugna, obtained from pigs, is sprinkled on the haunch to preserve it in the best way. In 1996, Parma ham acquired the Protected Designation of Origin (PDO) branding. When sliced, it has a rosy colour with a white outline (the fat) leaving a sweet, delicate flavour on the palate. The ham has the scent of a simple and genuine product.
HOW TO USE IT: excellent to eat with other cold meats, gnocco fritto or in the simple but tasty dish of Parma ham and melon.
