The anchovies come from the Mediterranean Sea. They’re cleaned, washed, filleted and put into the jar manually one by one. They’re preserved in a delicate oil which enables the anchovies to keep all the flavour and scent that seawater transmits.
HOW TO USE: in Italian cuisine, anchovies in oil are often used as a starter served with vegetables in oil; they are an excellent condiment with pasta.
